Being outside of the USA, the term Eggo was new to me.
What was this Eggo thing?
El/Eleven walks into a supermarket and takes all the Eggos she needs after Mike introduced the round floury goodness to her.
Considering what Eleven went through, it's safe to assume that the research facility did not have much culinary variety for her to eat. Eggo's must have tasted amazing. Considering it was the 80's, food regulations would have been pretty relaxed and probably had plenty of unwanted additives to make you eat the whole box.
An Eggo is a brand of frozen waffles that can be reheated using a toaster.
They consist of
Vegetable oil (could be either Soy, Canola or Palm), eggs, Sugar
Leavening agents (baking soda)
There are other variants such as blueberry, oat meal and cinnamon etc.
History behind the Eggo
Created as a convenience option for those who wanted to enjoy Waffles without the use of a waffle iron - the Dorsa brothers sold them to supermarkets in the US.
Orignally called 'Froffles' - frozen waffles in one word, their customers called them 'Eggo's due to their eggy taste. The brothers caught on to this and changed the name to Eggos. Good marketing move to listen to your customers.
Kelloggs purchased Eggo in 1968 and created numerous advertisements, their most infamous one being "L'eggo my Eggo" which can be seen here in all its colour TV greatness:
Eggo is one of the frozen waffle market leaders and still has many varieties of texture and flavours. Ranging from wholegrain, berries, cinnamon and other varieties of breakfast goods such as pancakes, french toast and breakfast sandwiches.

Due to Listeria contamination - pretty freightening, makes you think what kind of quality controls they have or lack there of!
If El is alive, can she survive on the Eggos?
So long as she's not eating the Eggos that are being recalled but that's not possible because its set in the 1983's so it is ruled out.
Hopper laid down 4 eggos in the provisions box. It raises the question, if she is even still alive? Can she make it with just 4 Eggos? Or is Hopper doing this because it reminds him of his own daughter? Not yet fully explained but people handle grief differently.
Assuming that the Eggos in the 80's had vitamin and mineral fortification - then Yes, she will just survive with those but barely. 2 Eggo waffles are a serve which provide approximately 25% of your Recommended Dietary Intake for an Adult. So with 4 waffles, she can get 50% which may or may nor be enough if she's living in the Upside Down.
If I assume that the Upside down works like our world then yes maybe. However Will survived a week in the Upside down - did he eat or drink anything while he was there?
We don't know but he must have been starving unless there was food in the Upside Down and Will just ate scraps. If I assume that El is in the Upside Down and alive - she should be able to survive provided she can find thos Eggos in the box.
If anything, Hopper should give at least 8 Eggos to ensure she can live but that's just me.
